Chicken Thighs + Fennel = Dinner
I’m kind of shocked that the most requested recipe of everything I’ve posted on Instagram was this one-skillet crispy chicken thigh and fennel situation. But I really shouldn’t be: it’s spring turned savory with just the right amount of heat. The recipe is riffed from a couple different ones in Molly Baz’s Cook This Book. IYKYK.
I’m Eating Cottage Cheese - And So Is Everyone Else
From childhood and beyond, cottage cheese’s lumpy texture has turned me off. It’s difficult to look past. The flavor is so mild that it just isn’t doing a lot. It’s giving . . . 90s diet culture.
OR SO I THOUGHT…
…until I discovered WHIPPED cottage cheese. Suddenly, a whole new world has emerged now that I know I can put it in a blender with fresh herbs, garlic, and a little lemon — something I used to do with feta, pre-inflation. Using full-fat, whole milk, cottage cheese makes a big difference in flavor; just leave the nonfat nonsense on the shelf. Please.
And as it turns out, I’m not the only one in my cottage cheese era.

I cannot take credit for this one (though I really wish I could): all the glory for finding this neighborhood gem goes to my girlfriend Katie’s best friend, Chiara. Chiara, I’d say you have no idea the gift you’ve given me, but I kind of think you do.
Rick’s Produce Market literally ONE BLOCK from my apartment. It’s stocked with the kind of fruit from which you take a bite and taste sunshine. They also carry veggies (I used the most stunning rainbow chard in yesterday’s Cod Curry) AND make smoothies — all for remarkably affordable prices. I recommend running, not walking, so you make it in time to try the tangerine juice. Fairly convinced it has the power to cure depression. At least for a moment.
Tortilla Tracker
I recently declared to family and friends that 2023 is the year I conquer tortillas. So far, it isn’t going very well. Stay tuned for continued attempts and (fingers crossed) future success.
